Today, we are going to take the classic, but boring, pork chop with rice and gravy and make it amazing. Instead of a regular pork chop we are going to use a pork tenderloin which is a thicker cut of meat that will stay juicy and will let us eliminate the gravy. We will also use short grain rice cooked in the risotto method to get a rich and creamy texture. Lemon in the risotto will accent the salty crust on the pork. This is an easy recipe and you will love the results.
